Samosa with Coriander Chutney
Samosa is very famous snack in all over India. People used to eat samosa as a snack often when they go for outing . This is very famous snacks specially in North India and favorite snack for parties. People used to eat with chutney or with chole. This is very mouth watering meal/snack which fulfill your hunger with its excellent taste and smell. I also love this snack and usually eat samosas when I go for shopping with my friends in India. Samosas are one of the most selling Indian street food in North India. Here in Sweden it is not easy to find fresh samosas anywhere. So I decided to prepare it at my home. I think you will also enjoy my favorite snack, Lets start preparing with me////

Ingredients for Samosa :

For Dough :
  • All purpose flour : 1 and half cup
  • Olive oil : 1/2 cup
  • Carom seeds(Ajwain): 1/2 teaspoon
  • Salt : 1/2 teaspoon
  • Water : 1/2 cup/as required (lukewarm)
For Samosa filling :
  • Potato : 4-5 medium size(boiled)
  • Peas : 1/2 cup (fresh or frozen)
  • Oil : 1 tablespoon(for frying potatoes)
  • Salt : 1 teaspoon(as per taste)
  • Coriander : 3-4 branches (chopped)
  • Cumin seeds : 1/2 teaspoon
  • Funnel seeds : 1/2 teaspoon
  • Bay leaf : 2 leaves
  • Coriander seeds : 1 teaspoon
  • Asafoetida powder(heeng) : 1/2 teaspoon
  • Cumin powder : 1 teaspoon
  • Garam masala : 1teaspoon
  • Chili powder : 1/2 teaspoon
  • Green chili : 1 (chopped)
  • Ginger : 1/4 inch( chopped)
  • Dry mango powder : 1 teaspoon
  • Oil : 1& half cup for frying samosas
Samosa Method :
  • Take a bowl ,mix all dough ingredients, add warm water and make a smooth dough. Cover with kitchen towel, keep it aside.
  • Take boiled potato in plate/bowl mash it properly. 
  • Heat oil in pan/steel pot,mix cumin seeds,funnel seeds,coriander seeds,bay leaf and asafoetida powder.
  •  Let it splutter then add green chili,chopped ginger after that mix cumin powder,chili powder and garam masala saute 30 seconds.
  •  Add peas, cook for 5-7 minutes. After that mix green coriander leaves,saute for 1 minutes.
  • Mix mashed potato in pan,mix properly with all spices. Cook for 8-9 minutes on medium heat then mix dry mango powder in potatoes and cook for 2-3 minutes.
  • Samosa filling is ready. Keep aside in a plate.
  • Take 2 tablespoon all purpose flour small bowl and mix with 1-2 tablespoon of water. Make this mixture like glue consistency, this mixture is useful for sealing the edges of samosas. Keep it aside.
  •  Take dough make small bolls and roll it with rolling pin. Cut into half then fold in a  triangle shape.
  • Seal the edge then fill the potato filling. After that seal the edges of samosa again.
  •  Heat oil in kadai/steel pot. Fry your samosa both side on medium heat.Your triangle samosa is ready to serve.

  • For Donut samosa, take small part from dough make a boll and roll it from rolling pin and make thin base then fill potato and roll it half.

  •  After that cut the remaining part into equal size and roll it again.
  • Make a circle after that seal the donut samosa edges. Fry this on low to medium heat. Your Donut samosa is ready.
Coriander Chutney : Take a mixture grinder add 3-4 branches coriander leaves,2 garlic clove,1 small tomato(sliced),1/4 ginger stick,1 green chili and salt. Give your grinder 4-5 rotation. Coriander chutney is ready.
