Glass Noodle Salad
Glass Noodle Salad is very healthy and tasty choice for who like noodles and green veggies both. This is full of green veggies and herbs. People who like Thai food with hint of Indian spices, they also love this salad. I made this salad first time and it was extremely delicious. You can use rice noodles or mung beans noodles for making this salad. For this salad,I have used green cabbage, red bell pepper,carrot,spring onion and cucumber. You can serve it with egg and avocado. Lets start cooking with me////

Ingredients for sauce :
- Soya Sauce : 4-5 tablespoon
- Lemon :1(squeezed)
- Honey : 2 tablespoon
- Fish sauce : 1 tablespoon
- Tomato ketchup : 2 tablespoon
- Vinegar : 2 tablespoon
- Sugar : 1 tablespoon
- Salt :1-2 teaspoon(as per taste)
- Olive Oil : 1 tablespoon
Other ingredients :
- Glass Noodles : 1 packet( small)
- Green Cabbage : 1& half cup(chopped)
- Red Bell Pepper : 1/2 cup
- Carrot : 1(small)
- Spring Onion : 2 stick(chopped)
- Cucumber :1/2 cup(Julienne cut)
- Onion : 2(sliced)
- Ginger : 1/2 inch (sliced)
- Garlic :3(sliced)
- Chili :1(sliced)
- Black Pepper :1/2 teaspoon
- Olive oil : 1 tablespoon
- Salt : 1/2 teaspoon(as per taste)
For Garnishing:
- Peanuts : 2 tablespoon(roasted)
- Lemon : 1-2 Small slice
- Avocado : 1/2 cup(diced)
- Egg : 1(boiled)
- Walnuts : 3-4(optional)
Method For Cooking :
- Soak glass noodles in normal water for 15 minutes. After that cook noodles in hot water for 3-4 minutes.
- Cut all the vegetables(cabbage,red bell pepper,spring onion,carrot and cucumber).Keep it in a bowl.
- Take chopped ginger,garlic & chili in your pestle and mortar and crush it. Keep it aside.
- Mix all the sauce ingredients in a bowl. Keep it aside.
- Heat oil in pan,add chopped onion. Let it brown then add ginger,garlic,chili paste. Stir fry for 2-3 minutes then add sauce mixture. Let it cook for 2-3 minutes on medium heat.
- Add cooked noodles and mix properly in sauce.
- After that add this noodle sauce mix in green veggies,Glass Noodle Salad is ready.
- Garnish with egg,avocado and nuts. Serve in a plate/bowl.
