Veg Pulav with Scrambled Egg and Raita

 


Veg Pulav  is very easy and simple to cook. It is very delicious and aromatic recipe either you cook it in steel pot or pressure cooker. You can cook it for your lunch/dinner as you like. You need lots of green veggies and spices for this recipe. Basmati rice is good for making this recipe but if you don't have basmati rice you can take any long grain rice. You can serve this Pulav with scrambled egg and any type of raita. Lets start cooking with me and enjoy the meal////

Ingredients for Veg Pulav : 
  • Basmati rice : 300 gm/ 2 cups(soaked 15 minutes)
  • Water : 2 cup
  • Peas : 1/2 cup(frozen/fresh)
  • Corn : 1/4 cup(frozen)
  • Cauliflower : 1 cup(frozen/fresh)
  • Onion : 1 big(chopped)
  • Potato : 1 small(diced)
  • Capsicum : 1/2 cup(sliced)
  • Ginger : 1/2 inch(chopped)
  • Green chili : 2(sliced)
  • Coriander leaves : 3-4 branches(chopped)
  • Salt : 1- 2 teaspoon(as per your taste)
  • Oil : 1-2 tablespoon
Spices for Pulav : 
  • Cumin powder : 1/2 teaspoon
  • Meat masala : 1 teaspoon
  • Red chili powder : 1/2 teaspoon
  • Curry powder : 1/2 teaspoon
  • Turmeric powder : 1 teaspoon
  • Cumin seeds : 1/2 teaspoon
  • Mint leaves : 1 teaspoon
  • Bay leaf : 2
  • Large cardamom : 2 pieces
  • Cinnamon stick : 1 small 
Method for Pulav : 
  • Heat oil in pressure cooker/steel pot, add 1 large cardamom and bay leaf saute 1 minute then add rice. Stir fry for 3-4 minutes then add water, pressure cooker it for 9-10 minutes. If you are cooking in steel pot cover the lid and cook for 10-15 minutes for medium heat.
  • Heat oil in pan,add cumin seeds,bay leaf and large cardamom. Let it splutter then add onion stir fry for 3-4 minutes.
  • Add potato cook for 5-6 minutes on low heat. After that add peas,corn and cauliflower saute it for 5-6 minutes on high heat .

  • Take another pan/wok heat 1/2 teaspoon,add all spices(cumin powder,meat masala,red chili powder,curry masala,turmeric powder and mint leaves) in pan,saute for 1-2 minutes then mix these spices in sauteed veagetables. Mix it properly.
  • Mix cooked rice in sauteed vegetables. 

  • Mix vegetables properly with rice and cook for 8-9 minutes on low heat. Vegetable pulav is ready to serve and enjoy.
Scrambled egg Method : 
  • For making scrambled egg you need 2-3 eggs ,salt, parsley leaves, black pepper and a pan for cooking.
  • Mix all above ingredients in a bowl. Heat pan spread butter/oil, then pour the mixture. Let it set for 20 seconds, lift and fold with spatula. Let it set for 20 seconds then lift and fold again.
  • Keep stirring and folding for 2-3 minutes until egg pieces are totally separated from each other.
Beetroot Cucumber Raita : Beetroot cucumber raita is very tasty and delicious raita. You can serve this raita with any main course dish. Lets start preparing this Raita with me....
 
  • For this raita you need 1 beetroot,1 cucumber,2 garlic cloves,chili powder,2 cup yogurt,green chili,salt and mint leaves.
  • Take a bowl,grate green chili,garlic, beetroot and cucumber. After that add yogurt,salt,red chili powder and mint leaves.
  •  Mix properly all ingredients. Let it set for 15-20 minutes. Beetroot Cucumber Raita is ready to serve.
