Garlic Pickle Recipe
Chilli Garlic Pickle recipe is most common Indian pickle recipe. It is prepared by most of the Indian at home. This is very hot and spicy recipe which is used for enhancing food taste and flavor. My grandma used to make this recipe for whole family and I learned this recipe from her. In North India we serve pickle with Tadka dal, potato sabji and paratha/aaloo paratha recipes. Main ingredients of this recipe is chilli,vgarlic,ginger and lots of roasted spices which gives very nice aroma and taste in pickle. Ingredients List :
- Green Chilli : 150gm
- Garlic Cloves : 20-30 buds(120gm)
- Ginger : 50 gm
- Turmeric powder : 1 tablespoon
- Chilli powder : 1 tablespoon
- Roasted spices : Coriander seeds,Funnel seeds,Cumin seeds(1 teaspoon each)
- Other spices : Fenugreek seeds,Mustard seeds,Kalunji masala(1/2 teaspoon each,unroasted)
- Salt : 2-3 tablespoon(as per taste)
- Musturd Oil : 4 tablespoon
- Vinegar : 1/2 cup
Cooking method :
- Peel of garlic skin and cut ginger in small pieces. Keep it aside in small bowl.
- Clean chilli then wipe water and take out chilli stem. Keep it aside.
- Roast all above spices in pan for 7-8 minutes in low heat.
- Gound all spices in pestle and mortar. Keep it aside.
- Take a steel pot/bowl, add chilli powder,turmeric and ground roasted spices.
- Mix other spices,salt,oil and vinegar together. It will give you nice aroma and taste.
- After-that add chilli,ginger and garlic then mix well with spices.
- Wait for 3-4 days, so that all spices blend well with other ingredients.
- Your Chilli Garlic Pickle is ready to serve. Enjoy cooking.
